Notes
Why are they called “deviled” eggs?
To start, what are they? They are hard-boiled eggs, peeled and cut in half. The yolks along with seasoning and mayonnaise is mixed to create a paste to then fill the 1/2 egg pieces. IN today’s culinary culture, deviled means that it is highly seasoned. I found this term came rom the 18th century culinary term used to describe a boiled or sometimes fried dish with a lot of seasoning or flavor.
